The short answer is: it keeps for a very long time. The “best before” date tells you how long the honey keeps its qualities at their best, not a deadline after which it becomes unsafe.
Thanks to its very low water content and high sugar content, bacteria cannot grow in honey.
How to store it
- close the jar tightly;
- keep it somewhere cool and dry;
- keep it away from light and heat;
- always use a clean spoon.
What if it crystallises?
It has not gone bad: crystallisation is a natural process. If it is past the date but shows no odd smell or signs, you can still use it.
