One step of extraction is uncapping: removing the wax caps the bees use to seal the cells full of honey. It is done by hand, so it can never be perfect: small bits of wax always end up in the honey.
Maturing removes them by settling: wax is less dense than honey, so… it floats! After about a month all the wax has risen to the top and the honey is clear, ready for jarring.
